Make thin, long slices from the soft section of the bamboo stalk. Placed it in an airtight container and filled it with water. These fermented bamboo shoots are also used in a particular cuisine called pork with bamboo shoots.
Elephant apple has a mildly tart flavour. In Assamese cuisine, it is often used. Lentil curries and fish dishes both utilise elephant apple. Another speciality of Assam is pork with elephant apple.
This dish uses stemmed colocasia leaves. Before adding the colocasia leaves and stems to the main recipe, boil them and discard the water. It will get rid of the oxalates that might irritate your tongue.
One of my favourite lush green vegetables is mustard green. Although I enjoy mustard greens in all of their dishes, pork really enhances their flavour.
It is produced with soft pork chnks that are boiled in a tasty mixture of black sesame seeds and spices. A distinct nutty flavour is added to the dish by the black sesame seeds.
This crunchy-munchy-sour-spicy dish is quite tantalizing. Try this along with some Assamese hard liquor!
