The sesame seeds give it a deliciously nutty taste that isn't overbearing. It is typified, like other Assamese recipes, by the sparing use of spices to bring out the flavour of the main component.
In addition to the chicken, potatoes are also cooked in this curry. When potatoes are added, they take on a completely other flavour and become sweet when eaten.
The Indian state of Assam is known for its traditional chicken curry prepared with curry leaves in the Assamese manner. Made with delicate chicken, delicious spices, and fresh curry leaves, it's a filling and aromatic curry.
This is a tasty chicken fried with a touch of mint that is spicy and sour. Even better, you may eat the chicken pieces wrapped in chapathis. This is not like that.
The challenging part of making this traditional dish is in the preparation phase – it is very tedious and time consuming to clean and cut the pigeons.
Assamese meals are incomplete without a slice of this lemon. In every restaurant and even in marriages, a tiny bowl with salt, green chilies, and slices of kaji nemu is mandatory.
