Toast a slice of your favorite bread. Mash a ripe avocado and spread it on the toast. Drizzle with olive oil, sprinkle with salt, pepper, and red pepper flakes. Optional toppings: poached egg, cherry tomatoes, or feta cheese.
Sauté shrimp with a bit of olive oil, salt, and pepper until cooked. In a bowl, mix diced avocado, halved cherry tomatoes, sliced cucumber, red onion, and mixed greens. Add shrimp, drizzle with lemon juice and olive oil, and toss gently.
Blend all ingredients until smooth. Adjust sweetness with honey if needed. For added flavor, consider adding a dash of vanilla extract or a sprinkle of chia seeds.
Halve the avocado and remove the pit. Mix canned tuna with Greek yogurt, lemon juice, diced celery, and red onion. Season with salt and pepper. Spoon the tuna mixture into the avocado halves.
Cook pasta according to package instructions. Blend avocado, basil, garlic, pine nuts, Parmesan, lemon juice, olive oil, salt, and pepper until smooth. Toss with cooked pasta and serve with extra Parmesan.
Warm tortillas in a pan. Mash avocado and spread it on the tortillas. Top with black beans, corn, diced red onion, and fresh cilantro. Drizzle with lime juice, season with salt and pepper, and add a spoonful of salsa.
Blend avocado, cocoa powder, almond milk, honey (or maple syrup), and vanilla extract until creamy and smooth. Chill in the fridge for at least 30 minutes before serving.
