Dry Roast Black Sesame Seeds Heat a pan over medium heat and dry roast the black sesame seeds until they turn aromatic and slightly golden brown. Keep stirring constantly to prevent burning. Once done, set aside to cool.

Grind Sesame Seeds Once the sesame seeds have cooled down, grind them into a coarse powder using a mortar and pestle or a spice grinder. Set aside.

Marinate the Chicken In a mixing bowl, combine the chicken pieces with ginger-garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes.
