Clean and cut the chitol fish into slices. Gather ingredients like onions, tomatoes, garlic, ginger, green chilies, turmeric powder, red chili powder, cumin powder, coriander powder, and mustard oil. Optionally, use raw papaya for tenderness and potato for extra flavor.
Marinate the fish pieces with turmeric and salt. Heat mustard oil in a pan, fry the fish pieces until golden brown, and set them aside.
In the same oil, sauté chopped onions until golden. Add ginger-garlic paste and cook until aromatic. Mix in the spices (turmeric, chili powder, cumin, and coriander) with chopped tomatoes. Cook until the oil separates.
Add water to the curry base and bring it to a boil. Gently place the fried fish pieces into the curry. Add raw papaya or potatoes if using, and simmer until the fish absorbs the flavors and the vegetables are cooked.
Add chopped coriander leaves and slit green chilies for garnish. Serve hot with steamed rice for a traditional meal.
