Chop onions, capsicum, mushrooms, and spinach for Chi Al Meh. After chopping, add ginger paste to a hot pan. Add salt, soy sauce, and chiles. Add all of the vegetables, then stir in the water. After covering the pan, bring the mixture to a boil for ten minutes.

Chi Al Meh, Manipur

Heat oil in a pan and fry chopped onions, garlic and chillies. Add minced meat, fry it for 10 minutes. Boil 4 litres of water vigorously and boil noodles for 5 minutes in it, keep stirring. Drain the noodles and wash them in cold water to avoid sticking.

Thukpa Gyaathuk

Assam's Laksa (a spicy-sour fish base noodle soup) is almost as staple and popular as rice. Preparations of exotic fruits and vegetables, as well as fish, duck and squab, are also favourite.

Combine chicken with ginger, garlic and chiles. After heating the oil, add onion and celery and saute. Add chicken and saute. Then add water or chicken broth and bring to a boil. Pumpkin, carrots, bamboo shoots and potatoes. Add spinach, salt and black pepper.

Mizoram-style chicken soup

Pour 2½ cups broth into a medium pot and heat over medium heat. Add chicken meat and risotto to the pot and let simmer on low for about 5 minutes. Stir 1 tablespoon lemon juice and fresh dill into the soup. Garnish with a spoonful of yogurt/sour cream (optional), salt and pepper to taste.
