In a separate bowl, beat the egg and then add the milk, melted butter (or oil), and vanilla extract (if using). Stir until well combined.

Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or whisk until just combined. Do not overmix, leave the batter lumpy.

Allow the batter to rest for about 5-10 minutes. This helps the baking powder activate and creates fluffier pancakes.

Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil.
