Haah Kumura: Assamese Duck Curry with Ash Gourd

For the duck 500 gms duck meat, cleaned and cut into small pieces 1 tbsp turmeric powder 1.5 tbsp chili powder 1 tbsp cumin powder 2 tbsp black pepper powder (coarsely crushed or ground) 1 tsp ginger-garlic paste 1 bay leaf 2 tbsp mustard oil Salt to taste

For the curry 10-12 pieces diced ash gourd Additional mustard oil for cooking

Marinate the duck In a bowl, combine the duck pieces with turmeric powder, chili powder, cumin powder, black pepper, ginger-garlic paste, bay leaf, mustard oil, and salt. Mix well and set aside for 15-20 minutes to marinate.

Cook the duck Heat mustard oil in a wok (kadai) over medium heat. If your duck has a lot of skin, you can reduce the oil amount as it will release fat while cooking. Add the marinated duck pieces and cook until browned on all sides.

Add water and simmer Add about a cup of water to the pan and bring it to a boil. Reduce heat, cover the pan, and simmer for 20-25 minutes, or until the duck meat is almost tender.

Add the ash gourd Add the diced ash gourd to the pan and stir gently. Cook for another 10-15 minutes, or until the ash gourd is tender. The curry should be thick and flavorful.

Adjust seasoning and serve Check the seasoning and add more salt or chili powder to your taste. Turn off the heat and garnish with chopped fresh coriander leaves (optional). Serve hot with steamed rice and enjoy!
