Mix 1 1/4 cups flour, 1/4 cup powdered sugar, and 1/4 tsp salt. Cut in 1/2 cup cold butter until crumbly. Add 1 egg yolk and 2-3 tbsp ice water, mix until dough forms. Chill for 30 minutes.

Preheat the oven to 375°F (190°C). Roll out the dough to fit a 9-inch tart pan. Chill for 10-15 minutes.

Line the dough with parchment paper, fill with weights or beans. Bake for 15 minutes, remove weights, bake for 5-10 more minutes until golden. Let cool.

Whisk together 1 cup sugar, 3 eggs, 1/2 cup lemon juice, and zest from 2 lemons in a saucepan. Cook over medium heat, whisking until thickened (5-7 minutes).

Pour the lemon filling into the cooled tart shell and refrigerate for 2-3 hours or until the filling is set.
