In a bowl, combine 500g mutton with 2 tbsp yogurt, 1 tsp turmeric, 1 tsp red chili powder, and salt. Let it marinate for at least 30 minutes.

Gather whole spices—2 bay leaves, 4-5 cloves, 1-inch cinnamon stick, 4-5 black peppercorns, and 2-3 green cardamoms.

In a heavy-bottomed pan, heat 2-3 tbsp mustard oil (or vegetable oil). Add the whole spices, allowing them to sizzle and release aroma.

Add 2 finely chopped onions and sauté until they turn golden brown..

TAdd 1 tbsp ginger-garlic paste and cook until the raw smell disappears.

Add 1 chopped tomato, 1 tsp coriander powder, 1 tsp cumin powder, and a pinch of garam masala. Sauté until the tomatoes are soft.

Add the marinated mutton to the pan and cook on medium heat, stirring occasionally, until the oil separates from the masala.

Pour in 1-1.5 cups of water, enough to cover the mutton. Stir well and bring to a boil.

Lower the heat, cover, and simmer for 45-60 minutes (or until the mutton is tender). Stir occasionally and adjust water as needed.

Once the mutton is cooked, add 1 tbsp vinegar or tamarind pulp for a tangy taste, typical of Railway Mutton Curry. Garnish with fresh coriander leaves and serve hot with rice or chapati.
