Resist the urge to beat the batter until it's completely smooth. A few lumps are okay! Overmixing develops gluten, leading to tough pancakes.
Let your batter rest for 10-15 minutes after mixing. This allows the gluten to relax, resulting in lighter pancakes.
A preheated pan is key. Medium heat is ideal for even cooking without burning. If the pan isn't hot enough, the batter will spread too thin and the pancakes won't cook through.
Resist the urge to crank up the heat. Too high a temperature will burn the outside before the inside cooks through.
Don't be a flipping fanatic! Patience is key. Wait until bubbles appear all over the surface and the edges start to set before flipping. Flipping too early will result in a torn, messy pancake.
