Clean the catfish thoroughly, removing the scales, guts, and fins. Marinate with salt, turmeric, lemon juice, and a pinch of chili powder. Let it rest for 20–30 minutes.
500g river catfish 2 tbsp mustard oil (or your preferred cooking oil) 1 onion (sliced) 2 tomatoes (chopped) 2–3 garlic cloves and 1-inch ginger (crushed) Spices: turmeric, cumin, coriander, and red chili powder Fresh coriander for garnish
Heat oil in a pan and fry the marinated fish lightly until golden. Remove and set aside.
In the same pan, sauté onions until golden. Add crushed garlic, ginger, and tomatoes. Stir in the spices: ½ tsp turmeric, 1 tsp cumin, 1 tsp coriander, and chili powder to taste. Cook until the mixture is aromatic. Add water to create a gravy and let it simmer.
Gently place the fried catfish into the gravy and cook for 5–7 minutes. Garnish with fresh coriander and serve hot with steamed rice.
